In the heart of “Camargue”, the highly salted water from the Mediterranean sea is trapped in giant and very shallow pools where it evaporates slowly with the help of the “Mistral” wind and the blazing sun of Provence. When the water is completely gone, only white crystals of salt remain. Professionals called “Sauniers” using giant racks called “etelle” hand-harvest the white crystals or salt. Then the white salt is washed, crushed and sorted by type; fine or coarse and left to dry with the help of the Mistral. Our Coarse sea Salt is mostly used when boiling vegetables, meat, etc.. Our Gourmet Gray Sea Salt is unprocessed and comes from Northern France where it has been harvested for centuries using the same ancient technique.
