Our cooking style is not the traditional French method with complex recipes and lengthy preparation time. To the contrary, our recipes are simple to execute and very easy to remember.
In 2004 approximately 9 Million children over six years of age were obese in the US, and most of them were diagnosed with diabetes and heart disease due mostly to poor nutrition. In the last thirty years the childhood obesity doubled for preschool children aged to 2 to 5 and adolescent aged 12 to 19. This number has more than tripled for children 6 to 11 years old. Even more alarming; 60% of obese children age 5 to 10 have developed at least one CVD (Cardio Vascular Disease) such as elevated total cholesterol, insulin, or blood pressure.
I had a dream that I could change the way people eat in this country, by showing children early in their lives the right things to eat.
I was lucky enough to be raised in a family of chefs; my mom and dad are both the most incredible five-star cooks I have ever seen. Among other things they showed me that healthy food was not complicated to prepare. Even though portions were available to us in an unlimited fashion, I don’t recall seeing any obese kids in my whole family or even in the town where I grew up. The tastier the food, the less one needs to eat.
